Ingredients
175 g Self raising flour If using plain or all purpose flour add an extra 1½tsp baking powder
120 g Granulated sugar
175 g Vegetable or Sunflower oil
4 large eggs
1 tsp Baking powder
¼ tsp Salt
1 tsp Vanilla extract
1 tsp ground Cinnamon
1 tsp ground Nutmeg
60 g butter: cubed
6 Medium size apples
2 tbls Lemon juice
Directions
- Preheat oven to 175°C/350°F/Gas mark 4.
- Lightly grease the baking dish with a little butter
- For the Apple base
- Peel and core the apples and cut into small cubes, place into a large bowl and add the lemon juice. Give the apples a good mix to make sure they are well coated in the lemon juice
- Place the apples into the baking dish and spread out evenly over the bottom
- Evenly spread the butter cubes over the apples and set aside
- For the sponge topping
- Place the eggs into a large bowl and whisk them until completely broken up
- Add the oil and completely combine
- Add the vanilla extract and sugar and give the mixture a good whisk
- Sieve in the flour, baking powder and salt then whisk together until you have a nice smooth batter
- Pour the batter over the apples and smooth out evenly with a spoon or silicone spatular.
- Be sure to spread the sponge batter to reach all corners and sides of the dish
- Place in the oven and bake for 50 mins or until the sponge has risen, is a nice golden brown and a thin skewer/cocktail stick comes out clean when inserted in the middle
- Serve hot with Creme Anglaise and enjoy!
