  • 800 g Sliced Pork Loin: Pork loin is the cut of pork taken out of the midsection of the pig.

  1. Trim the fat from the pork loin escalope. Then, take a meat mullet and flatten the pork until a thickness of 3mm is reached.
  2. Take a large bowl and put the pork escalope in it. Now, pour in the milk and allow it to rest in the bowl for at least 10 minutes.
  3. While the escalope is resting. prepare the aromatic breadcrumbs. Take a large plate and mix in the breadcrumbs with chopped garlic, fennel seeds, sweet paprika, chopped parsley, oregano and thyme.
  4. Now, bread the pork escalope. One by one, gradually remove the pork escalope from milk, retaining as much humidity as possible. Place the pork escalopes in the aromatic breadcrumbs, pushing down with the fingertips to allow for a strong breadcrumb covering.
  5. Place a large skillet on the heat and pour in the vegetable oil. Once the oil is heated, shake off the excess breadcrumbs from the escalopes and place them in the frying pan.
  6. Cook until golden brown on both sides. Place a few sheets of kitchen paper in order to absorb the excess oil from the escalopes.
  7. Season with salt and pepper before serving!
