Bite sized cocktail sausages in a tasty tomato sauce for an economical meal in one pot. Serve straight from the pot accompanied by chunks of crusty bread for a simple nutritious family meal.

Ingredients

  • 12 Pork Chipolatas

  • 1 large Onion roughly diced

  • 2 Red Peppers roughly diced

  • 2 cloves of Garlic finely diced

  • 1 tbsp plain flour

  • 2 heaped tbsp Tomato Puree

  • 125 ml Red Wine

  • 1 14 oz can chopped Tomatoes

  • 250 ml Beef Stock or beef cube in 250 ml of hot water

  • 3 tbsp Worcestershire Sauce

  • 1 tsp Smoked Paprika

  • 2 Bay Leaves

  • 1 sprig of Rosemary

  • 2 14 oz cans mixed beans cannellini/white haricot beans or any beans of your choice drained

  • Salt & Pepper to taste

Directions

  • Turn the chipolatas into cocktail sausages by pushing down with your finger in the middle of the sausage and twisting to produce two smaller sausages
  • Heat up a little oil in a heavy-based casserole dish that has a lid and brown of the sausages
  • Remove the sausages from the dish and add the onion, garlic and peppers
  • Sweat these off until the onion shave softened
  • Add the flour and cookout for 2/3 minutes,
  • Add the wine and deglaze the dish picking up any residue left from the sausages
  • Add chopped tomatoes, Worcestershire sauce, smoked paprika, bay leaves, a sprig of rosemary and seasoning to taste
  • Stir well and then add the chipolatas back into the dish
  • Mix it well, reduce heat to low and a soft simmer, replace the lid.
  • Allow the casserole to simmer with the lid on for 45mins. Stirring occasionally
  • After 45 mins, stir in the drained beans
  • Do not replace the lid and allow to simmer for another 10mins, stirring occasionally, by which time the sauce should be nicely thickened,.
  • Pick out the bay leaves/rosemary stalk
  • If you feel the sauce could be a little thicker, mix 1 tablespoon of flour in a cup with a little water to make a thin smooth paste
  • Gradually add the flour paste to the casserole a little at a time and let it simmer for a minute or two to thicken
  • Continue adding the flour paste until the required consistency of the sauce is achieved
  • Always allow the flour paste to cookout for a minute or two before serving
  • serve with creamy mashed potatoes or just nice crusty French bread
