Directions
- Turn the chipolatas into cocktail sausages by pushing down with your finger in the middle of the sausage and twisting to produce two smaller sausages
- Heat up a little oil in a heavy-based casserole dish that has a lid and brown of the sausages
- Remove the sausages from the dish and add the onion, garlic and peppers
- Sweat these off until the onion shave softened
- Add the flour and cookout for 2/3 minutes,
- Add the wine and deglaze the dish picking up any residue left from the sausages

- Allow the casserole to simmer with the lid on for 45mins. Stirring occasionally
- After 45 mins, stir in the drained beans
- Do not replace the lid and allow to simmer for another 10mins, stirring occasionally, by which time the sauce should be nicely thickened,.
- Pick out the bay leaves/rosemary stalk
- If you feel the sauce could be a little thicker, mix 1 tablespoon of flour in a cup with a little water to make a thin smooth paste
- Gradually add the flour paste to the casserole a little at a time and let it simmer for a minute or two to thicken
- Continue adding the flour paste until the required consistency of the sauce is achieved
