Ingredients
1 tbsp Olive Oil or sunflower oil
1 Kg Chicken Thighs skinned, boned and cut into bite sized portions
4 Spring Onions large is good, keep the green and whites parts separate
2 medium Carrots slice lengthwise and thinly sliced
2.5 cm Fresh Ginger Stem peeled and sliced thinly
1 can Pineapple Chunks
300 ml Chicken Stock
1 tbsp Cornflour
1 tbsp Tomato Puree
2 tbsp Castor Sugar
2 tbsp Malt Vinegar
2 tbsp Soy Sauce
225 g Bamboo Shoots
125 g Bean Sprouts
100 g Mange Tout Thinly Sliced
Boiled Rice to serve
Directions
- Pre-heat your slow cooker if necessary
- Heat a little oil in a large frying pan and brown off the chicken thighs all over
- Add the white parts of the spring onion, carrot and ginger and stir fry for about 2 minutes
- Add the Pineapple chunks with the juice and the chicken stock
- In a small bowl place the cornflour, tomato puree and sugar and mix in the soy sauce and vinegar until you have a nice smooth paste.
- Add this mixture to the frying pan with the chicken and stir well bringing the liquid back to the boil
- Carefully spoon the chicken pieces into the slow cooker and pour the liquid over the top, add the bamboo shoots and press the chicken beneath the stock
- Replace the lid and set the timer on low for 7 hours
- When the timer has run its course, add the bean sprouts, the green parts of spring onion and the mange tout, replace the lid and let it cook for another 15 mins.
- In the meantime, you can be cooking the boiled rice for serving
